Ingredients for Avocado on Paleo Bread

For the bread & avocado

4 slices paleo bread

2 ripe avocados

Zest and juice of 1 lemon

½ red chilli, deseeded and finely chopped (optional)

For the eggs

4 eggs (at room temperature)

A little oil (for frying) or butter

For garnish

A small handful of chives, finely chopped

Other fresh herbs of your choice (e.g. parsley, dill or basil)

Sea salt and freshly ground black pepper

How to make Avocado on Paleo Bread?

Prepare the avocado

  1. Halve and stone the avocados. Scoop the flesh into a bowl and mash with a fork until slightly chunky.
  2. Stir in the lemon zest and juice, and the chopped red chilli if using. Season lightly with sea salt and freshly ground black pepper.

Cook the eggs

  1. Choose your preferred egg style: poached, soft-boiled, or fried. For fried eggs, heat a little oil or butter in a non-stick pan over medium heat and cook eggs until whites are set and yolks are cooked to your liking. For poaching, bring a pan of water with a splash of vinegar to a gentle simmer, create a vortex and slip in cracked eggs, cooking 3–4 minutes for runny yolks. For soft-boiled, simmer 6–7 minutes and cool in cold water.
  2. Keep the cooked eggs warm while you toast the bread.

Toast the paleo bread

  1. Lightly toast the paleo bread slices in a toaster or under a grill until golden and crisp.

To combine

  1. Spread a generous layer of the mashed avocado mixture over each toasted slice of paleo bread.
  2. Place a cooked egg on top of each slice.
  3. Sprinkle with chopped chives and your chosen fresh herbs. Season with extra sea salt and black pepper to taste. Serve immediately.
