Ingredients for Dark Chocolate Mousse

100 g dark chocolate (71–80%) (3.5 oz)

150 g boiling water (5.2 oz / about 150 ml)

A pinch of salt

A pinch of ground cinnamon (optional)

How to Make Dark Chocolate Mousse

  1. Break the dark chocolate into small pieces and place in a heatproof bowl.
  2. Pour the boiling water over the chocolate and let sit for 30–60 seconds to melt. Stir until smooth and glossy. Add a pinch of salt and cinnamon if using.
  3. Place the bowl on an ice bath (a larger bowl filled with ice and a little water). Using a hand mixer, whisk the chocolate mixture vigorously until it thickens and becomes light and mousse‑like in texture (about 3–5 minutes).
  4. Spoon the mousse into serving glasses or dishes. Chill in the fridge for at least 30 minutes to set slightly.
  5. Serve topped with fresh berries.
