Ingredients for Baked Veggie Patties

4 zucchinis – grated and excess water squeezed out

4 stalks of fresh spring onions

1⁄4 bunch of dill

1⁄4 bunch of parsley

1⁄4 bunch of fresh mint

2 cloves of garlic

3 eggs

1 teaspoon of cumin powder

½ teaspoon of salt

1 teaspoon of black pepper

3 tablespoons of whole wheat flour

How to Make Baked Veggie Patties?

  1. Grate the zucchinis into a mixing bowl. 
  2. Squeeze thoroughly with your hand or a cheesecloth to remove excess water and place in another mixing bowl. 
  3. Add finely chopped fresh spring onions, dill, parsley and garlic. 
  4. Add eggs, ground cumin, salt, black pepper and whole wheat flour and combine. 
  5. Add and spread the mixture you have prepared in a rectangular glass baking dish.
  6. Bake in a pre-heated oven at 180 degrees for 30 minutes.

Recipe tips

Thanks to the vegetables and greens used in the recipe, you will consume foods rich in fibre, which will improve your bowel health. In order to maintain the blood glucose within healthy limits, it is highly advisable for people with diabetes to include fibre-rich vegetables and greens in every meal.

 

Consuming 2 slices of patties will provide the protein equivalent to 1.5 meatballs and the carbohydrate equivalent to 1 slice of bread. Therefore, this is a healthy recipe that can be consumed both as a main meal and a snack, as long as the carbohydrate intake recommended by your dietitian is taken into consideration.

What can I eat with it?

Side dishes such as ayran, plain kefir or cacik, yoghurt with celery, or yoghurt with pepper can be consumed.
